Yesterday we arrived at Katoomba, in the Blue Mountains a couple of hours west of Sydney. The Etters and we are staying in a rented holiday house near the Katoomba Christian Conference grounds. Andrew and Jennie Nixon are our hosts. That means they and their cutie, almost-2-year-old Hannah, are staying with us, cooking for us and helping us whatever way we need.
They greeted us with something we quickly discovered we needed, though we hadn’t already known it–anzac biscuits. Translation into American: biscuit=cookie. But what’s anzac? Australia-New-Zealand-Army-Corps.
And that has what to do with cookies? These thick, chewy, yummy treats are hearty and sturdy enough for packing and shipping and became a favorite “care package” item shipped to loved ones serving in the military during WW II.
I checked this recipe for Anzac biscuits with Jenny and she says it’s very close to hers. She drops large spoonfuls onto the cookie sheet so they run together. That’s how hers end up square. This way they’re large enough so her school-age children don’t complain they didn’t have enough in their lunch.
Excuse me now. I better go see if any are left in the cookie box. . . . lots of oats . . . . breakfast . . . .
